December, an end-of-year treat
December, at the Fenice pastry shop, isn’t just a month. It’s a state of mind.
The days begin when it’s still dark outside, and the workshop slowly lights up in the early morning, with the usual familiar sounds: bowls, ladles, the oven heating, the smell of butter warming. It’s a busy time, yes, but it’s also the time when we learn to trust time.
In December, you can’t rush. The dough demands attention, pauses, respect, time. There are gestures we’ve been repeating for years, and this month in particular, they seem to find their natural place. The cold helps, slows things down, brings order. The butter becomes more docile, the hands work with more precision, everything moves at a more balanced pace toward Christmas and the holidays.
Then the air in the laboratory changes scent. Spices, citrus fruits, vanilla arrive. You don’t need large quantities: it takes very little to transform the atmosphere. These scents belong not only to recipes, but to memories we relive year after year. They evoke laid tables, slow breakfasts, slices of Veneziana cheese cut calmly and shared without much thought.
December desserts don’t like shortcuts. There are leavenings that require hours and hours, rests that can’t be shortened, waits that are part of the final result. It’s a silent work, made of observation and listening. You learn to recognize when a dough is ready, when it still needs time, when it’s time to leave it alone.
Natural leavening, during this period, finds its best balance. The cold makes everything gentler, deeper. The cake rises slowly, develops complex aromas, becomes light. It’s a growth you don’t see right away, but you can feel it after the first bite.
December is also the month when pastry making becomes deeply familiar again. Each dessert speaks of hours of work, alternating hands, small gestures passed down. It’s not just what ends up in the window, like in a jewelry store: it’s the entire journey that takes place before being displayed.
This is why December desserts are different.
They’re not just delicious and tasty: they’re the result of a specific choice: to slow down, to respect the season, to value time. And perhaps that’s precisely what makes them special: knowing that behind every slice, there’s an entire month dedicated to their care.
