Tea, Herbal Tea or Infusion? Differences and Pairings with Desserts

CATEGORIES

When the air turns cooler, a warm cup changes the pace of a break. In everyday language, we often use tea, herbal tea and infusion as though they were the same thing. In reality, they are similar in the way they are prepared and enjoyed, but differ in origin, ingredients and character — and at La Fenice, we like to make that distinction. Understanding these differences helps us choose more consciously and also makes pairing them with one of the desserts made in our pastry kitchen more interesting. Three questions are enough: which plant does the drink come from, what aromas does it express, and how intense is it on the palate? From here, a more harmonious afternoon treat takes shape, created through either affinity or contrast.

What tea really is

Strictly speaking, tea comes from the leaves of Camellia sinensis. Black, green, white and oolong teas all come from the same botanical species; what changes is the processing of the leaves, the degree of oxidation and, consequently, their colour, aroma and flavour. This common origin explains why very different beverages share a recognisable structure. Black tea tends to offer deeper, malty, spicy or fruity notes. Green tea is often more vegetal and fresh; white tea more delicate; oolong can range from floral and ripe fruit notes to toasted nuances. These descriptions are only a guide: origin, harvest, processing and preparation can significantly alter the result in the cup.

Herbal tea and infusion: similar words, but not identical

Infusion refers first and foremost to a method: hot water is poured over leaves, flowers, fruits, seeds or spices and left to steep for the necessary amount of time. From a technical point of view, tea is also prepared by infusion. In everyday use, however, the word infusion is often reserved for blends that do not contain Camellia sinensis leaves, such as fruit, flowers or herbs. Herbal tea is a broad term describing a beverage made from one or more parts of plants. It can consist of a single ingredient, such as chamomile or mint, or a blend. To understand the difference without being too rigid about terminology, it can be remembered this way: tea comes from one specific plant; herbal teas and infusions can combine many different plants, fruits and spices.

And what about rooibos?

Rooibos does not come from Camellia sinensis and therefore is not tea in the botanical sense. It is obtained from a South African plant and offers a smooth flavour, naturally free from the caffeine typically found in tea. Its rounded character, sometimes with vanilla or woody notes, makes it an interesting pairing with biscuits, shortcrust pastries and desserts containing nuts.

How to pair tea and desserts: start with intensity

The most useful rule is to match intensities. A light tea served with a very rich dessert risks disappearing; a highly spiced blend can overpower a delicate cream. Before choosing, consider the dessert: is it crumbly or creamy? Is butter, fruit, cocoa, nuts or a spice the predominant flavour? The pairing can seek affinity, echoing similar aromas, or contrast, using freshness and slight astringency to lighten a richer sensation. Both approaches work when neither element overpowers the other. With simple biscuits and buttery shortcrust pastries, moderately intense black teas, smooth oolongs and rooibos are pleasant choices. Toasted or rounded notes complement the crumbly texture without weighing it down. With apples, pears, citrus fruits or red berries, it is important to respect the acidity of the filling. An aromatic black tea complements an apple tart; a delicate green tea can accompany fresh fruit and light creams; a red berry infusion intensifies the fruity character, provided it is not too sweet. If the tart is already very aromatic, a simple, clean-tasting tea is preferable. A soft crumb and notes of butter, vanilla or citrus call for a beverage that is enveloping yet clean. Elegant black teas, floral oolongs and rooibos are natural companions. The warm drink enhances the aromas of the leavened pastry and encourages you to savour each bite slowly. Cocoa requires structure. With a dark chocolate dessert, you can choose a robust black tea or an unsweetened spiced blend. Milk chocolate works well with softer profiles, such as rooibos or roasted oolongs. Hazelnuts, almonds and pistachios pair well with warm, lightly roasted notes. The key is to avoid adding too much sweetness: a dry-tasting cup keeps the palate refreshed.

A warm break, without automatic choices

Choosing between tea, herbal tea and infusion is not a matter of terminological precision. It is a way of paying closer attention to what is in the cup and on the plate. During an autumn break, the temperature invites us to slow down; the right pairing makes that moment more distinct, without any need to complicate it. The final piece of advice is very practical: taste the drink first, then the dessert, and finally the drink again. If the beverage retains its own character and the flavours of the dessert become clearer, the pairing works.

Among villages, vineyards, and pastry shops: the sweetest trip on Lake Garda with our tips.

CATEGORIE

Among vineyards, villages, and scents: a slow journey on Lake Garda

There are places to visit. And then there are places to savor slowly, like a freshly baked brioche or a glass of Lugana at sunset.

The cycling stages we recommend between Lugana di Sirmione, the moraine hills, and the Mincio River express precisely this: a land to be experienced slowly, letting yourself be guided by the scents of the countryside, the silence of the vineyards, and those little wonders that can only be discovered by pedaling slowly.

For La Fenice Pasticceria Bistrot, this itinerary can become much more than a simple excursion: an experience to be savored. Because each stop has its own flavor, its ideal dessert, its perfect moment.

The slow awakening of the Frassino lake

The journey begins at the Frassino lake, a small natural oasis surrounded by greenery, vineyards, and suspended silence. Here, time truly seems to slow down. The migratory birds, the calm water, and the morning light create an almost poetic atmosphere. The perfect dessert? A soft brioche with light vanilla cream. Fresh, delicate, and luminous like the landscape. You can pick it up at our pastry shop, ready to enjoy as a quick refreshment upon arrival.

The Tower of San Martino and the Taste of Memory

Pedaling through the moraine hills, you reach the Tower of San Martino della Battaglia, a place rich in history and spectacular views. Here, the land speaks of memory, tradition, and deep roots. It’s the perfect time for an authentic break: a generous portion of fresh fruit tart with homemade cream, perhaps accompanied by a glass of delicious orange juice, which you’ll find in your brunch basket at La Fenice. We prepare it upon request for those who want to pedal away from the city, surrounded by nature and the countryside.

Castellaro Lagusello: the postcard-perfect village

Through narrow streets surrounded by greenery and romantic views, you reach Castellaro Lagusello, one of the most charming villages in the area, overlooking the famous heart-shaped lake. Here, our La Fenice pastry shop could express the sweetness of love with a small dessert: a vanilla mousse with a glossy glaze, named “Infinitamente vaniglia” (Infinitely Vanilla), ideal for such a romantic setting.

Borghetto sul Mincio: Poetry on the Water

Arriving in Borghetto sul Mincio is one of those moments that truly lingers in your memory. The mills suspended over the water, the sound of the river, the ancient bridges, and the houses that seem to rise from the Mincio River transform the journey into a scene straight out of a movie. Here, the perfect pairing is something simple yet unforgettable: a crispy millefeuille with Chantilly cream, to be enjoyed slowly while watching the water flow (we can make it especially for you upon request!).

The quiet of San Pietro in Monzambano

The road becomes more secluded, almost intimate, until you reach the Church of San Pietro. A silent place, completely immersed in nature, where the bicycle seems to follow the rhythm of your breathing. For this stop, we imagine a dessert with an ancient flavor: a selection of our almond cantucci, simple and authentic, like the surrounding landscape.

The perfect ending: Ca’ dei Frati

And finally, a return to the aromas of wine. The Ca’ dei Frati winery welcomes travelers with tastings and the warmth of family tradition. Here, the most natural pairing is born: mini pastries accompanied by a glass of Tre Filer, the winery’s renowned passito wine made from Turbiana grapes, famous for its Lugana DOC. Because, after all, the beauty of these itineraries isn’t in arriving. It’s in stopping and discovering. Stopping for a view. For a chat with a local. For a shared dessert. For the smell of freshly baked bread after a long ride. And it’s precisely there that La Fenice Pasticceria can become part of the journey: not just a stop, but a memory to take with you on your rides and, ultimately, why not, even home.

Easter on Lake Garda: the tradition of the artisanal colomba from Pasticceria La Fenice

CATEGORIES

Easter in Italy is a riot of symbols, rituals and flavours that are passed down from generation to generation. Among the most beloved sweet icons is undoubtedly the Easter dove, a symbol of peace and rebirth, the undisputed star of spring tables. But if there is a special way to rediscover this traditional dessert, it is to savour it in its most authentic and artisanal form: that of the Caffetteria Pasticceria La Fenice, a gem set on the shores of Lake Garda.

A rite of leavening and patience

Behind every colomba from our Pasticceria La Fenice lies a meticulous and passionate process, which you can observe in our glass-enclosed laboratory on Lake Garda. The dessert is born from a live sourdough starter, cultivated with dedication by our Master Pastry Chef Manuel Pedrali, and from two separate doughs that rise for over 24 hours—and sometimes up to 36—before being baked. But it doesn’t end there: after being baked, the colomba is left to cool upside down for at least ten hours and then left to mature for a week, so that every aroma blends perfectly.

Precious ingredients and unmistakable taste

For its most refined and classic version in the history of our pastry shop, the apricot colomba, La Fenice uses Armogiana apricots from Costigliole Agrimontana, candied whole with the stone to maintain softness and release a unique flavor. These are pitted by hand in our laboratory. To complete the aromatic profile there are natural vanilla pods and selected dairy butter. Each colomba is then packaged by hand, with care and respect for its artisanal nature.

An authentic taste experience

Savoring the colomba from La Fenice is not only a delight for the palate, but a true ritual. The Master Pastry Chef’s advice? Warm it slightly before tasting it, to enhance its aroma and softness. Each slice tells the story of a dessert made with love, dedication and that artisanal care that has distinguished our pastry shop for over ten years.

A gift from the author

Whether for the Easter table, an elegant gift or a moment of personal pampering, the artisanal colomba from La Fenice is much more than a dessert: it is a gesture of beauty and quality, an invitation to rediscover the slowness and authenticity of Italian confectionery craftsmanship. Also available on the online shop, as well as in the shop in Lugana di Sirmione, it reaches every corner of Italy, bringing with it the memory of Lake Garda and the passion of those who still believe in the magic of things done well.

Coffee: our ritual

CATEGORIES

One of the most important products for a bar is coffee: espresso in particular, but also in a multitude of variations such as corrected, American, restricted, macchiato (followed by a multitude of different types of milk, from soy to almond) , but also a good cappuccino and so on. The cup of coffee contains various meanings: from a symbolic pat on the back at the start of the day, a short moment of relaxation between various appointments and finally a way to end dinner and say goodbye to the day. Different contexts can be found around a coffee: from a work meeting to a meeting with a friend who hasn’t been seen for a while. What is certain is that it accompanies and marks our days and we attribute numerous and varied meanings to the moments we dedicate to it.

At La Fenice, we like to combine coffee with our pastries: this is how our Capriccioso was born, a good Illy espresso accompanied by three mignons with creams and fruit to be enjoyed together. Excellent in the morning to energize yourself, but also as a snack or after a meal, in a convenient opportunity that also allows you to taste our splendid sweets.

Illy caffè is an important company, a historic brand in the production of this product and for this reason it was selected by us for our restaurant. In fact, it has been producing coffee since 1933 together with local farmers in more than twenty countries around the world, without forgetting attention to sustainability. They choose only 1% of the best Arabica beans, collaborating for many years with growers who pay great attention to quality and sustainability. Research and experimentation on raw materials represent a constantly evolving path. After transformation, the beans are carefully selected: in fact, even a single imperfect bean of Arabica coffee can compromise the aroma of the final blend. In this particular case, Illy seeks the perfect balance: everywhere, in fact, its taste is always the same. This is because it is the result of the perfect balance of nine types of excellent Arabica according to Illy, coming from the best plantations in South and Central America, India and Africa. This results in a coffee with a rich aromatic profile and a balanced taste, which can be enjoyed even without sugar.

But there’s more! Patented in 1932 by Illy, pressurization is a conservation system in which the air in the jar in which the beans are stored is replaced by an inert gas at a pressure greater than atmospheric pressure. Thus, not only does the freshness of the coffee remain intact over time, but its aroma is enhanced. This is how we store the beans before grinding them to make your espresso!

With Illy we talk about Arabica, but what does it mean? There are two main types of coffee: Arabica and Robusta, the first is also the most common and contains less caffeine than the second, about half. With Arabica in particular we refer to a more valuable quality of coffee, which takes its name from Arabia, where coffee originally began to gain greater popularity. After this little in-depth analysis, all you have to do is try our coffee, aware of its history and its high quality.

What to see around Lugana?

CATEGORIES

The area of southern Lake Garda really has a lot to offer. After a nice breakfast at La Fenice with an artisanal brioche and a cappuccino made on the spot (or we recommend our delicious tasting of artisanal pastries to discover all the facets of our production!), you can head out to discover the surrounding area.

For those who love nature

We recommend the splendid green park called Parco Sicurtà in Valeggio sul Mincio – about 15km from Fenice. For those staying at our hotel Lugana Parco al Lago there are discounts for couples and families. This park can be visited on foot or by bicycle and allows you to observe different types of flowers throughout the year – the blooming of tulips is truly unmissable. Among water lily lakes and topiary art, you can discover rare plants and flowers while relaxing in an intense and vivid contact with nature.

For those who love adventure

One of the most beautiful walks – trekking on Lake Garda is the Busatte-Tempesta. It is not very close to La Fenice, but can be easily reached with a half-hour drive. There is a convenient car park right at the beginning of the route. The duration, which varies according to the pace, is about an hour and a half and includes panoramic points, some stops for photographs and also stairs, which are quite long and at times a little steep. However, it is a well-maintained path and also suitable for children. This is a different way of seeing Lake Garda, from an incredible perspective that will truly leave you breathless.

For those who love history

Lake Garda is rich in history and culture, to be discovered and visited as a couple, with friends or with the family. A truly interesting place for the history of the unification of Italy is the monument dedicated to Vittorio Emanuele II, the so-called Tower of San Martino della Battaglia. It stands in the middle of the battle field, now a protected park and completely covered with Turbiana vineyards, the native vine for the production of Lugana Doc. You pay an entrance ticket to access the tower, but a visit to the museum next door is also included which contains various nineteenth-century finds relating to the battle of San Martino and Solferino, which is also told in school textbooks. The climb up the tower is a bit steep at times, but the view you can enjoy from the top is worth the effort: in fact, a 360 degree panorama opens up over the southern area of the lake and on the clearest days you can even see the Villa del Garda with its neo-Gothic spires.

For those who love food and wine

Three reasons to visit Ca’ dei Frati: food and wine on Lake Garda

CATEGORIES

A few steps from our Bistrot La Fenice, there is the Ca’ dei Frati family winery where you can spend special experiences tasting the local wine, Lugana DOC.

Ca’ dei Frati is currently the largest company in Lugana, with almost 300 hectares of property; is characterized by a history spanning four generations, starting from 1939 when the founders Edvige and Felice Dal Cero moved from a small town in the province of Verona, Montecchia di Crosara, on the southern shores of Lake Garda, in search of of land that responded well to agriculture.

Ca’ dei Frati therefore today represents the peasant and traditional work of many years of experience in the vineyard, always seeking to enhance the terroir and open to welcoming any public: from wine lovers to specialized sommeliers.

So why visit our cellar?

It is one of the historic places in the Sirmione area: a free visit (bookable from the website www.cadeifrati.it) or a special experience (book here with lunch or dinner in our La Lugana Trattoria next to the Bistro: https://caffetteriapasticcerialafenice -onlineshop.it/products/amarone-experience-voucher-con-data-chiusa) will make you remember your stay in our territory in a truly special way. We recommend the weekend tasting tour to all those who really want to discover the history of the place and the estate, the typical flavors and the perfect combinations with the local cuisine. For more info: mariachiara@cadeifrati.it
