In reality, they are similar in the way they are prepared and enjoyed, but differ in origin, ingredients and character — and at La Fenice, we like to make that distinction. Understanding these differences helps us choose more consciously and also makes pairing them with one of the desserts made in our pastry kitchen more interesting. Three questions are enough: which plant does the drink come from, what aromas does it express, and how intense is it on the palate? From here, a more harmonious afternoon treat takes shape, created through either affinity or contrast.

What tea really is

Strictly speaking, tea comes from the leaves of Camellia sinensis. Black, green, white and oolong teas all come from the same botanical species; what changes is the processing of the leaves, the degree of oxidation and, consequently, their colour, aroma and flavour. This common origin explains why very different beverages share a recognisable structure. Black tea tends to offer deeper, malty, spicy or fruity notes. Green tea is often more vegetal and fresh; white tea more delicate; oolong can range from floral and ripe fruit notes to toasted nuances. These descriptions are only a guide: origin, harvest, processing and preparation can significantly alter the result in the cup.

Herbal tea and infusion: similar words, but not identical

Infusion refers first and foremost to a method: hot water is poured over leaves, flowers, fruits, seeds or spices and left to steep for the necessary amount of time. From a technical point of view, tea is also prepared by infusion. In everyday use, however, the word infusion is often reserved for blends that do not contain Camellia sinensis leaves, such as fruit, flowers or herbs. Herbal tea is a broad term describing a beverage made from one or more parts of plants. It can consist of a single ingredient, such as chamomile or mint, or a blend. To understand the difference without being too rigid about terminology, it can be remembered this way: tea comes from one specific plant; herbal teas and infusions can combine many different plants, fruits and spices.

And what about rooibos?

Rooibos does not come from Camellia sinensis and therefore is not tea in the botanical sense. It is obtained from a South African plant and offers a smooth flavour, naturally free from the caffeine typically found in tea. Its rounded character, sometimes with vanilla or woody notes, makes it an interesting pairing with biscuits, shortcrust pastries and desserts containing nuts.

How to pair tea and desserts: start with intensity

The most useful rule is to match intensities. A light tea served with a very rich dessert risks disappearing; a highly spiced blend can overpower a delicate cream. Before choosing, consider the dessert: is it crumbly or creamy? Is butter, fruit, cocoa, nuts or a spice the predominant flavour? The pairing can seek affinity, echoing similar aromas, or contrast, using freshness and slight astringency to lighten a richer sensation. Both approaches work when neither element overpowers the other. With simple biscuits and buttery shortcrust pastries, moderately intense black teas, smooth oolongs and rooibos are pleasant choices. Toasted or rounded notes complement the crumbly texture without weighing it down. With apples, pears, citrus fruits or red berries, it is important to respect the acidity of the filling. An aromatic black tea complements an apple tart; a delicate green tea can accompany fresh fruit and light creams; a red berry infusion intensifies the fruity character, provided it is not too sweet. If the tart is already very aromatic, a simple, clean-tasting tea is preferable. A soft crumb and notes of butter, vanilla or citrus call for a beverage that is enveloping yet clean. Elegant black teas, floral oolongs and rooibos are natural companions. The warm drink enhances the aromas of the leavened pastry and encourages you to savour each bite slowly. Cocoa requires structure. With a dark chocolate dessert, you can choose a robust black tea or an unsweetened spiced blend. Milk chocolate works well with softer profiles, such as rooibos or roasted oolongs. Hazelnuts, almonds and pistachios pair well with warm, lightly roasted notes. The key is to avoid adding too much sweetness: a dry-tasting cup keeps the palate refreshed.

Choosing between tea, herbal tea and infusion is not a matter of terminological precision. It is a way of paying closer attention to what is in the cup and on the plate. When looking at a pastry shop display case you only see the last step, the last comma of a long story. The dessert is in front of you, perfect in its shape, with glossy surfaces, defined layers and aromas that promise something good, mouth-watering. It seems natural, almost inevitable. But the truth is that before arriving in the display case every dessert goes through a path made of attempts, corrections and small big adjustments.

A dessert is rarely born perfect on the first attempt. Above all pastry making, which by definition, is a difficult and mathematical art. Behind that neat and precise slice or that velvety and inviting mousse there are often many trials, more than one imagines.

Some desserts find their balance in a few preparations according to the genius and flair of the pastry chef, others instead require time, patience and many tastings, especially for the more traditional preparations that must respect consistencies, flavors and aromas to be truly excellent.

The idea: the first step

Everything almost always begins with an idea. It can arise from a seasonal ingredient, but also from a memory, from a pairing that intrigues the Master pastry chef. Maybe it comes while thinking about the flavors of one’s own land, the typical fruit that begins to ripen or the desire to create something fresher for summer or more enveloping for autumn. In this phase the dessert exists only in the mind: imagined textures, flavor contrasts, aromas that still have to take shape. But between imagining and creating there is always a short distance when talking about creativity.

The first trial: understanding if it really works

The first preparation serves above all to understand if the idea is right. The ingredients are combined, the structure is tested, it is observed how the textures react. Sometimes the taste is correct, but the texture is not convincing. Other times the opposite happens: the consistency is perfect, but something is missing in the flavor. It can happen that the mousse is too light, that the cream covers the other ingredients or that the balance between sweetness and acidity is not yet the desired one. It is normal. It is part of the experimentation process.

The following trials: small adjustments

Here begins the most patient work.
A proportion is changed, a cooking method is modified, a minimal amount of an ingredient, a different combination is tried.

Maybe it is enough to slightly reduce the sugar to better bring out an aroma. Or increase the percentage of fruit to give more freshness. Sometimes the work is on the texture: a more airy mousse, a silkier cream, a more crumbly base.

Before arriving in the display case, a dessert must pass a simple but decisive test: it must really be good and receive the approval of several palates that rotate around the management of a pastry shop.

It must not only convince at the first tasting, but also at the second. And then also at the third. It must maintain balance, lightness and pleasantness, always, consistently.

When this happens, the dessert is ready to be shared and offered. And it is only then that it appears in the pastry shop display case, at the end of a long process that can take months of trials, of raw materials, of choices and of quantities. And thus the new jewel takes its place in the display case to delight the eyes and then the palates.

What’s the difference between mousse, cream, semifreddo, and Bavarian cream?

Standing in front of the window of our La Fenice pastry shop, you often read words that sound soft even before you taste them: mousse, cream, semifreddo, bavarois.
They seem similar. They all speak of sweetness, they all promise lightness. Yet they are not the same thing.

Knowing the difference isn’t just a technical curiosity: it’s a way to make better choices, to understand what to expect with the first spoonful, to recognize the consistency that best suits the moment and the situation.

Behind each of these preparations is a story, an origin, and a precise structure. And each one expresses a different way of understanding softness.

Mousse: the lightness that comes from the air

“Mousse” in French means “foam.” The name says it all.
Mousse originated between the 18th and 19th centuries in France, when pastry chefs began experimenting with lighter consistencies by incorporating air into their preparations through whipped egg whites or whipped cream.

Its structure depends not only on the ingredients, but on the gesture: whipping, lightening, lifting. Air becomes an integral part of the recipe.

A mousse is soft, almost impalpable. It melts quickly in the mouth. It is less dense than a cream and more immediate than a Bavarian cream.

Its name tells its story: it is neither ice cream nor cream. It is something in between. It is usually made with a base of pâte à bombe (egg yolks whipped with hot syrup, a technique also used for pasteurization), Italian meringue, or whipped cream, and is then frozen. The presence of air and fat prevents it from becoming hard and frozen.

The consistency is cold but soft, firm but not rigid. It slices easily, holds its shape, and melts slowly.

An ice cream born from a choice

There is a moment, every day, when the La Fenice pastry shop fills with silent scents: when fresh milk meets cream and the transformation begins. It is a process that is not rushed. It does not follow trends, nor the urgency of numbers. It is made of waiting, of small gestures repeated with respect, of ingredients that all have a story to tell. That is where our ice cream is born.

We are on Lake Garda, but the roots of what we produce come from further away. From Sicily, for example, where pistachios grow in a fiefdom in San Biagio, on a generous and rough land, which makes them so intense that they are enough on their own. Or from Piedmont, where the IGP hazelnuts of the Langhe speak with a full and rounded voice. Or even from distant islands, like Tahiti or Madagascar, which give us the most fragrant vanilla beans in the world, the ones we mix with care to find the right balance in our ice cream.

We don’t need many flavors. We make a few and deliberately limited ones and we dedicate ourselves to those. Each one is a small exploration: a search for harmony, but also for truth, far from bright colors and pre-packaged flavors.

And then there’s fiordilatte. The favorite flavor of our master pastry chef, Manuel Pedrali. He always tastes it, wherever he goes. For him, this ice cream flavor is a kind of acid test. A fiordilatte ice cream must taste of cream, without being covered in anything. That’s when you understand if the ice cream is really good: when it doesn’t need anything else to tell its story.

Sorbets, on the other hand, follow the time. We produce them with 60% fruit, real and lots of it. When we can, we choose that of the producers in the zero-kilometer area: ripe peaches that taste of sun, juicy melons, freshly picked strawberries, wild blackberries.

These are flavors that exist only for a moment and perhaps that is why they are so special. And our yogurt ice cream? It is made with fresh yogurt. That’s all. But whoever tastes it, feels the difference. Making ice cream, for us, is a way to stay true to an idea. That simplicity is a value and that quality is built with coherence, day after day, over time. At Fenice, we do not try to amaze: we try to be sincere.

All the sweets for Father’s Day

Father’s Day, celebrated on March 19 in conjunction with St. Joseph’s Day, is deeply rooted in Italian tradition. Not only does this day pay tribute to the father figure, but it also represents a journey through sweet delicacies that vary from region to region, each with its own peculiarities and fascinating stories, as children ideally present their father with a sweet to celebrate him.

St. Joseph’s zeppole: an icon of southern Italy

Originating in Campania, zeppole di San Giuseppe are perhaps the most emblematic dessert of this holiday. They are soft doughnuts made of choux pastry, fried or baked, filled with velvety homemade custard and adorned with a black cherry in syrup. Their history dates back to the 19th century, when the famous Neapolitan gastronome Ippolito Cavalcanti first mentioned them in 1837. Tradition has it that these delicacies are prepared in honor of St. Joseph, the patron saint of fathers and carpenters. Of course, there is no shortage of them in our display cases of sweets, fresh and ready to be enjoyed overlooking the lake!

St. Joseph’s cream puffs: the Roman tradition

In Rome, the celebration of Father’s Day is inextricably linked to St. Joseph’s cream puffs. These sweets, similar to zeppole, but round in shape, are always made with choux pastry and fried until perfectly golden and then filled with custard of various flavors, in addition to the classic vanilla. Their presence is so deeply rooted in Roman culture that there is a popular saying, “St. Joseph fritters,” to emphasize the custom of enjoying these delicacies during the holiday. There is no shortage of Phoenix-style cream puffs: hazelnut, pistachio, zabaglione, vanilla cream or cream and cream, there is something for everyone!”

Rice fritters: a Tuscan sweetness

In Tuscany, and particularly in the provinces of Florence and Siena, Father’s Day is the occasion to enjoy Frittelle di Riso. These golden morsels are prepared by cooking rice in milk with sugar and citrus zest, then fried to a crispy exterior that encloses a soft, aromatic heart. Their peasant origin makes them a symbol of simplicity and authenticity. On Lake Garda, on the other hand, frittelle are a typical Carnival dessert, and even at Fenice they are made artisanally with light flours and very soft fritters.

Carnival Chiacchiere: all the names of a dessert that gets talked about

If there is a dessert that everyone agrees on at Carnival, it is undoubtedly the Chiacchiera. Crispy, golden and covered in icing sugar, this fried delight crosses Italy with a thousand different names, just like a harlequinade of flavors and traditions.
But why so many names? The answer is simple: each region wanted to put its personal touch on it, making the chatter not just a dessert, but a real story of local traditions, underlining different aspects and customs.

Le Chiacchiere in Italy: a journey through names

In Piedmont, for example, they call them Bugie, but in the Alessandria area they become Gasse, in the Cuneo area Risòle and in the Vercelli area Gale. Sliding into Val d’Aosta, however, we find the Merveilles, a name that already makes you dream. And Liguria? Here, the Bugie confirm themselves as protagonists, except in the Imperia area, where they prefer to call them Cròstoli. In Lombardy there is no lack of imagination: in Bergamo we find them as Galarane, in Brescia they become Saltasù (perhaps due to the lightness with which they are sautéed in boiling oil?), while in Mantua they are transformed into Lettuces, perhaps due to their crunchy thinness and their appearance. What if we go even further down? In Veneto and Trentino they become the Gròstoi or Galani, while in Emilia Romagna we indulge in the Fiocchetti (Rimini), the Intrigoni (Reggio Emilia), the Sprelle (Piacenza) and the Sfrappole (Modena, Bologna and Romagna). In short, different names for the same irresistible sin of gluttony!

Carnival Fritters: another delicious tradition

But Carnival wouldn’t be the same without another protagonist: the Carnival Fritter. This too, like the Chiacchiere, has a long and fascinating history. Born in Venice in 1300 and consecrated as the national dessert of the Serenissima in 1700, its production was an art reserved for a real corporation, that of the fritoleri. With its dough rich in raisins, pine nuts and sugar, the Frittella was fried in large pans and served with plenty of sugar. An icon so loved that it ended up in the pictorial works of Carlo Goldoni and Pietro Longhi.

But why are Carnival desserts generally fried?

The answer is simple: in winter, after the pigs were slaughtered in November, there was plenty of lard, the perfect ingredient to add crunch and flavor to the kitchen. And so, between a Chiacchiera and a Frittella, Carnival becomes a feast for the eyes and the palate.

Autumn dishes: a feast for all the senses

Autumn is the perfect time to rediscover the authentic flavors of seasonal products: the days are getting shorter and the first cold weather begins, so let’s warm up with some excellent home-made hoes from the new menu. The Mantua pumpkin also becomes the protagonist in the “Orto” dish, where the caramelized slices meet an excellent Amarone teriyaki sauce, completed with walnut kernels and seasonal edible flowers. For risotto lovers, “Esperienza d’Amar(one)” offers a unique creation with Acquerello rice creamed with Amarone Pietro Dal Cero DOCG, raw scampi and a delicious rose petal powder.

Local products and chef’s creativity

Each dish tells a story, like the “30 Ore”: it is a long-leavened focaccia (made by our pastry chef Manuel) with stringy mozzarella and coppa cooked in Lugana DOC wine, perfect to accompany a glass of Cuvée dei Frati Extra Brut. Or the dish dedicated to the season: “Autumn on the Plate”, combines a pearl barley soup with cannellini beans, slices of roasted Delica pumpkin and vegan mayonnaise.

Teasing your palate with a cutting board

For those who love to share, our cutting boards are ideal. The “Traditional Platter” offers a selection of local cured meats and cheeses, according to a careful seasonal selection by the chef, accompanied by homemade sweet and sour vegetables and home-made mustards, while the “Vegetarian Platter” celebrates all seasonal vegetables, always zero kilometer and carefully chosen by the chef combined with sauces and mayonnaises, including vegan ones.

A journey through local flavors and wines

To make the food and wine experience complete, each dish is paired with a glass of wine selected from the range of wines offered by the Ca’ dei Frati winery, such as Pratto – less known but exceptional with autumnal flavors – or Amarone della Valpolicella Pietro Dal Cero DOCG. Our team of sommeliers in the dining room will be happy to recommend the perfect pairing to enhance every flavor of our menu.

The aperitif: yes, even in autumn!

If you want to tease and try our cuisine anyway, we have created the new autumn version cicchetti: “i Vespri”. Imagine walking along the quiet shores of Lake Garda, the fresh September air caressing your face and the sound of the waves gently lapping the shore of Lugana. At a certain point, the unmistakable scent of cream and chocolate reaches you and your gaze stops on an artisanal pastry shop, right there, which opens its veranda in front of the lake.

The open laboratory is a small theater of taste, where every day, with always fresh and natural ingredients (seeing to believe!), masterpieces are born, such as our artisanal ice cream.

Every morning, the pastry chefs carefully choose the ingredients: dark chocolate, Sicilian pistachios, hazelnuts from Piedmont, fresh milk and scented vanilla pods.

This is how the flavors of our cream ice cream come to life, which seem to envelop the palate like an embrace, with a fresh and velvety texture, giving that sensation of sweetness that makes you want to taste more.

But there’s more. On the counter, in the magical ice cream wells, alongside the traditional flavours, fruit ones stand out, prepared only and exclusively with fresh seasonal fruit. Fragrant strawberries, juicy peaches, freshly picked berries. All fruit ice creams are also strictly lactose-free, to ensure that even those who are intolerant can enjoy a moment of pure freshness. And then, just when you think you’ve seen it all, you notice those special flavors that constantly change, a bit like the wind blowing on the lake: today maybe you’ll find a raspberry sorbet with ginger, tomorrow a mascarpone and fig cream. You never know what to expect, but that’s the beauty of it.

And it doesn’t end here. Because ice cream cannot only be enjoyed in a cone or cup at La Fenice. In the pastry shop

The color format remains the same: we celebrate colors of the rainbow of fruit and vegetables that we constantly use in ours varied proposals. Summer arrives with our ice cream coffees

Coffee: our ritual

One of the most important products for a bar is coffee: espresso in particular, but also in a multitude of variations such as corrected, American, restricted, macchiato (followed by a multitude of different types of milk, from soy to almond) , but also a good cappuccino and so on. The cup of coffee contains various meanings: from a symbolic pat on the back at the start of the day, a short moment of relaxation between various appointments and finally a way to end dinner and say goodbye to the day. Different contexts can be found around a coffee: from a work meeting to a meeting with a friend who hasn’t been seen for a while. What is certain is that it accompanies and marks our days and we attribute numerous and varied meanings to the moments we dedicate to it.

At La Fenice, we like to combine coffee with our pastries: this is how our Capriccioso was born, a good Illy espresso accompanied by three mignons with creams and fruit to be enjoyed together. Excellent in the morning to energize yourself, but also as a snack or after a meal, in a convenient opportunity that also allows you to taste our splendid sweets.

Illy caffè is an important company, a historic brand in the production of this product and for this reason it was selected by us for our restaurant. In fact, it has been producing coffee since 1933 together with local farmers in more than twenty countries around the world, without forgetting attention to sustainability. They choose only 1% of the best Arabica beans, collaborating for many years with growers who pay great attention to quality and sustainability. Research and experimentation on raw materials represent a constantly evolving path. After transformation, the beans are carefully selected: in fact, even a single imperfect bean of Arabica coffee can compromise the aroma of the final blend. In this particular case, Illy seeks the perfect balance: everywhere, in fact, its taste is always the same. This is because it is the result of the perfect balance of nine types of excellent Arabica according to Illy, coming from the best plantations in South and Central America, India and Africa. This results in a coffee with a rich aromatic profile and a balanced taste, which can be enjoyed even without sugar.

But there’s more! Patented in 1932 by Illy, pressurization is a conservation system in which the air in the jar in which the beans are stored is replaced by an inert gas at a pressure greater than atmospheric pressure. Which ice cream cup do we find at La Fenice that best represents you?
“My favorite cup that I created is the one that combines pistachio with hazelnut. At La Fenice there are no basic preparations, the ice cream is purely artisanal and for this reason the flavors are extremely genuine and authentic; because of this therefore it is interesting to create new combinations”.

Why did you choose these two traditional flavours?
“Both the pistachio and the hazelnut contain a fruit inside their shell with an elegant and refined flavour; their soft and warm colors remind me of the earth and also the country of my childhood. In fact, since I was little my mother taught me to shelling the hazelnuts that grew in our garden. From this simple and repetitive gesture I learned a great lesson: not to judge anyone because like each of us how the hazelnut appears it seems hard on the outside, but inside it contains a delicate, tasty and tasty heart”.

What does it mean to work in contact with people, especially on Lake Garda?
“I love my job and the relationship I have with La Fenice customers: they know each other many people, we chat; it’s a very dynamic job, which allows me to do a great variety of always different activities. I’m also very excited about the fact of advise and direct our customers in purchasing gifts or presents, listening to their needs and suggesting our artisan products both of our La Fenice pastry shop and the Ca’ dei Frati winery, packaging everything with care, strictly by hand”.

The stubbornness and the ever lively curiosity towards the world of catering and bars do not betray his solid Sardinian roots. In recent years, in addition to wine, he has delved into the art of bartending and mixing, conceiving and creating unusual and always different cocktails in rotation on the Fenice menu.

What are your interests in the world of cocktails, which are your passion and also a hobby in your free time?
“I have always been fascinated by the world of cocktails, with their colours, flavors and niche products: over time I have created and created different ones, to amaze, but also to test. Once upon a time I was more interested in after-dinners, because I liked the idea of ​​relaxing after dinner in front of an intriguing drink with something to talk about before going to sleep. Now, however, I love pre-dinners more because they are a direct accompaniment to dinner.”

What are the best characteristics that a good cocktail must have?
“In my opinion, I consider well-made aperitifs in particular to be well-balanced in terms of alcohol, which perhaps include a portion of fruit or, better yet, some lime to freshen up the drink, or those which contain a bit of soda, thus softening the drink, are interesting. the alcoholic part”.

Yours is a very creative job: what do you feel when you create a new drink?
“I really like creating these cocktails because in my opinion the aperitif is that moment when after a day of work or in any case after a busy day, you finally relax in front of a drink. And if I may add, given the place where I work, you are also pampered by the magical sound of the lake’s waves. An ideal situation to open the senses to tasting a good cocktail with balanced and pleasant flavours. I like to think that this thoughtful drink helps our customers relieve the stress of the day.”

What is your favorite product for making your drinks?
“I particularly love Vermouth, or tanned wine or also called aromatized wine, an Italian product that truly has a long fascinating history. It seems that Hippocrates, a Greek doctor, already administered a similar flavored wine to those who suffered from loss of appetite. I find it to be a very versatile product and above all it allows me to reiterate my Sardinian origins in the glass because one of my favorite Vermouths is Sardinian, Silvio Carta, despite the origins and birthplace of the product being Piedmontese”.

So at this point tell us an original recipe for a cocktail!
“The cocktail I will present to you is a revised Americano. I use 1/3 of Silvio Carta red Vermouth which is a Vermouth with aromas of Mediterranean scrub – the laurel stands out on the nose, together with rosemary, it has a resinous part reminiscent of juniper, on an iodized background reminiscent of saltiness, the sea Sardinian. Then 1/3 of Mazzetti bitters – a pure bitter that brings hints of rhubarb, bergamot zest and a slightly spicy finish to the nose. Finally 1/3 of Baladin hay tonic – it is a tonic characterized by floral and herbaceous notes, given by the hay. Pour the Vermouth and the Mazzetti bitters into a low tumbler glass with lots of ice, pour in the tonic and mix everything well; finally the drink is decorated with a sprig of myrtle and a peel of bergamot which will perfume the drink. The name of the cocktail I created? I thought of a famous Neapolitan song by Renato Carosone: Tu vuo fa’ l’Americano!”.

It’s Spring with new ingredients

Since the first days of April, La Fenice Bistrot has changed its menu: always rotating, different every week – and also different weekly between lunch and dinner for greater variety and offer – the spring menu focuses on clear but delicate flavours, keeping some constants: respect for seasonality, freshness of the products and lots of color on the plate!

In fact, spring is a very colorful season: flowers bloom, fruits are prepared and many fragrant scents are released into the air. We therefore try to exploit all this natural potential in our cuisine, which we are sure will surprise you.

From cicchetti to aperitif, from lunch to dinner, the raw materials are fresh, colorful and absolutely seasonal.

In chef Edo’s new menu in particular we focus on three elements: peas, carrots and asparagus.

Peas are green proteins and are among the richest legumes. They are also rich in antioxidants (so they keep us young) and have very high anti-inflammatory properties thanks to the abundance of vitamins A, B, C and E. These small green balls are generous carriers of vitamin K which should be integrated into the diet every day. They also help break down bad cholesterol and aid digestion.

Carrots have a very long list of advantages and benefits! The beta-carotene contained in them is first of all a panacea for improving vision; furthermore, the potassium contained helps and supports brain health. Like peas, carrots are rich in vitamin K, perfect for strengthening bones. Our green choice in 5 points

At La Fenice we look at green: it is not just a new trend, but an awareness of the fact that we all have to do something good for this planet. Small gestures that, repeated in everyday life, bring results if we look to the future. Plastic, pollution and waste are now the order of the day, so we decided to take some precautions to see a little more beauty around us.

  • Cotton placemats: after the reopening of the Bistrot La Fenice in February 2024 we decided to avoid paper placemats (which cannot even be recycled if dirty) and plastic placemats and to create placemats for lunch and dinner in soft cotton. In addition to a more pleasant texture during meals, they give a touch of elegance to the room and are 100% organic.

  • Fruit and vegetables only and only in season without plastic containers: everything delivered to us by our suppliers tries to be increasingly sustainable, often avoiding useless plastic packaging, films and papers. Furthermore, our cuisine aims to follow seasonality: this means that the word freshness is the order of the day.

  • Separate waste collection: we are increasingly attentive to the disposal of materials that accumulate after a day of work. Glass bottles, cans, milk cartons, plastic packaging for raw materials, cardboard boxes: everything is separated by our team staff and thrown into strictly separate bins.

  • A more sustainable menu: our new menu includes 70% veggy dishes and raw materials, with a limited and responsible use of meat and fish that come from farms and suppliers that are as local as possible, with an eye to the ethics of animal treatment. Eating well, respecting the environment and nature is one of our most important values.

  • The lake is one of our strong points: the view, the sun and the relaxing lapping of the waves. La Fenice is also all of this. For this reason we constantly take care of the beach in front of the patio: it is not our property, but we are committed to keeping it clean, particularly during the summer when the lake currents bring to the shore not only algae (often torn from boats in motion), but unfortunately also plastic of various kinds.

  • These are five small steps, but they can mean a lot, especially on weekends when the flow of customers is greater.

The Easter dove: between Lombardy and Veneto

La Fenice has been experimenting with a balanced dough for more than ten years now balanced for its leavened products: the Easter Colomba and the Christmas Veneziana. In both cases are two traditional desserts, consumed during the two holidays most important of the year: Easter and Christmas. Alongside the traditional product, the same every year, which contains soft and fragrant Armogiana apricots candied and pitted by hand, a special edition is produced every year always different and curious: an opportunity to try new combinations and refresh your palate with innovative flavors. But where does the Easter leavened product come from? dove-shaped?

It is known that the dove has become the reference par excellence of Easter pastry shop; however love, purity and peace are the key concepts that are found behind this Christian symbol. They were born around this dessert also many legends, which certainly partly reflect the history of its origin. However, this is what we like to convey with the artisanal Colomba of the Phoenix is ​​that these principles translate into reality: loving every morsel of this very special and refined dessert, the result of very long experimentation and dedication; purity is expressed in its totally natural raw materials and finally peace, because our wish is that the sharing of this dessert traditional brings serenity to every family.

According to tradition, the Easter dove was born in Lombardy, in our region. Legend has it that, around 610, in what was the capital of the Lombards, Pavia, Queen Theodelinda hosted a group of Irish pilgrims, led by the famous Saint Colombano. The sovereign offered the guests a rich banquet, but the saint refused the offer because they were in Lent. Theodelinda and her husband Agilulf were very offended to see their generosity rejected and so it was that Saint Colombano decided to bless the rejected game banquet by transforming it into numerous doves of white bread.

A second version always has the center of the narrative in Lombard Pavia, but dates back to 572, during the government of King Alboin who waged war on the Byzantines by besieging the city. After three years the resistance was defeated and the barbarians finally entered the city. It was then that the locals decided to give the invaders some soft sweets in the shape of a dove, an undisputed symbol of peace, in an attempt to stem their war violence. A gesture that avoided the sacking of the city, which even became the capital of the kingdom.

A third Lombard version takes us to the battle of Legnano in 1176, in the late Middle Ages, when the newly created Municipalities of the Lombard League defeated Emperor Frederick Barbarossa. It is said that a leader saw two pigeons alight on the League’s insignia, unconcerned by the sounds of battle. To instill courage in his men, the leader had the chefs make dove-shaped bread, made from eggs, flour and yeast, reproducing that very shape as an apotropaic and lucky symbol. But a version of the colomba also exists in our neighboring region of Veneto, where the Christmas tradition of our Veneziana also comes from (as a variant of the classic Milanese panettone). It is a variant of fugassa, or focaccia (a term which, in the Serenissima of Venice, has always been associated with various types of desserts) with the addition of the shape of a dove. The ingredients, according to a precise specification to which our pastry shop adheres to maintain high quality standards, are: flour, sourdough starter, eggs, sugar, butter, honey, salt, vanilla, cocoa butter, almonds, hazelnuts, corn starch and candied fruit. All the ingredients are kneaded together several times, then the dough is left to rest for a long period, before proceeding with cooking and a further rest upside down for the final maturation of the artisanal product. The epicenter of focaccia and Venetian colomba is the famous city of Verona, not far from our Garda shores. The antiquity of the dove-shaped version of fugassa is more uncertain, but it seems that in Verona it already existed at the end of the 19th century as a common and traditional baked product for Easter.

The artisanal Fenice dove: How and Why

We interview Manuel Pedrali, our Master Pastry Chef, who since the opening of La Fenice almost fifteen years ago has always created exceptional sweet and delicious haute patisserie creations with perseverance and great passion.

Tireless in tests, in work and in specialization courses, to learn more and more about high-level pastry making techniques.

In this interview he presents us with his leavened prince in full: the dove for Easter, soft and fragrant, which can give a truly inebriating experience to those who treat themselves to a slice.

Far from competitions and visibility, Manuel travels on his own track: tenacious and precise in the choice of ingredients and in the steps for making it. Master of leavened products, he reveals some of his secrets below: we asked him some questions.

“Hi Manuel, tell us about your sourdough starter. We know that pastry chefs have a particular relationship with this raw material which must be constantly nourished and which represents the true treasure of the artisan laboratory”.

“My sourdough has been looked after for years and constantly over the years, I refresh it every day and I also use it daily to make brioche every morning here at La Fenice. Temperature management is important in this procedure: it is a living raw material and very delicate to manage if you want to be sure of the success of the final product. When we are producing the doves, we refresh the sourdough three times a day: at 5 in the morning, then at 8.30 and finally at 12, creating the dough at 3.30 pm. Refreshing means adding yeast, along with the right amount of flour and water. This procedure is done to nourish the mother yeast and to create the strength that it will subsequently need for the leavening phase, which is very important for creating a light and easily digestible leavened product”.

“Tell us then what is really special about this Colomba cake that you make with your sourdough starter: how does it differ and why choose it?”.

“First of all, it must be considered that I produce it with my live sourdough starter, I emphasize live, not to be confused with the dehydrated or dried sourdough starter that is often found in these productions. The latter in fact requires brewer’s yeast to activate.

In our case, however, we use totally natural yeast and a long production process that requires many hours; last but not least, leaving the leavened product upside down for the settling phase after baking in the oven. Finally, each dove made in this way is carefully packaged by hand. In fact, in the package there is a note with information on consumption and conservation: it is a totally artisanal product. Furthermore, the colomba della Fenice distances itself from the classic traditional colomba because the flavors we choose have always not been the classic ones: we do this to give the end customer greater choice, while the dough always remains unchanged.

The flavors we produce are generally two or three every year: the classic apricot always remains present, with one or two possible annual special editions. In the case of the classic apricot colomba we use whole Agrimontana fruits, which we pit by hand (a long job, but these candied apricots are the best on the market).

We do this procedure to maintain softness and fragrance in the product, thus remaining very soft and fluffy. Also interesting is the slight hint of almond present in these apricots: few people know that bitter almond comes from the apricot stone. Furthermore, I must also add that we don’t work to save money: for each one kilo dove, we use half a kilo of apricots! I want to say a few more words about some of the products we use for production – because in fact all the raw materials are strictly natural: our Colomba contains vanilla which we process in berries, of the Tahiti variety (which has longer and more fragrant berries) to give an unforgettable aromatic appearance as soon as you open the bag on the table.

Furthermore, no less important is the flour we use: only certified and selected from the Besozzi “Antica Tradizione” mill. This means that we stay far away from the fortified flours that are too often found in pastry products on the market.”

“Very interesting: it is not often thought that behind a product that is brought and eaten at the end of the meal with relatives and friends, in closing, there is actually a great deal of balancing and research that fully justifies the price, for a artisan product like this. How do you suggest we enjoy your dove?”.

“The best way to have a truly exceptional experience is to warm the Colomba in the oven at around 40-50° for 5-10 minutes. This way it softens even more, because it is rich in butter. The butter we use is very good dairy butter. Then it is cut and tasted in company: it would be ideal with a mascarpone or vanilla cream, or, why not, even with a scoop of artisanal ice cream, perhaps also of our own artisanal production, given that we are moving towards the summer !”.

“We understand that you are a great researcher and lover of creations obtained with genuine products. How did you arrive at the perfection of your Colomba recipe?”.

“There are very few secrets here: just many years of work and continuous modifications, constant trials and tests. This is how I arrived at the recipe that I use to create our doves.

I obviously respect the specifications for leavened products which indicate exactly the percentages of sugar, eggs and butter that must be contained in these baked products. Few know of its existence, but it serves to protect high quality artisanal products. These are minimum quantities, which if exceeded, indicate and underline the high quality of the product created.

And this is where I have always aimed with my creations. In fact, with the Colomba della Fenice we have often gone beyond these minimum quality parameters, selecting over the years only the best raw materials that best match our philosophy”.

Exploring Seasonal Flavors in the Bistro

The Bistro’s new proposal totally respects the seasonality of the products: seasonal vegetables and fruits give color to our winter menus. There are four of them, in continuous rotation until the change of season.

The broccoli

We find it in our ’88 pastry: it is rich in antioxidants, vitamins and fibre, excellent for the cardiovascular system and for intestinal health.

Curiosity: broccoli comes from an area between Greece, Turkey and Syria, but was brought to Italy already by the Romans, who had developed the custom of eating it raw before meals, because it was believed that this allowed the body to better absorb the wine during banquets.

The cauliflower

This vegetable helps prevent hypertension by lowering blood pressure thanks to its amino acid content. Furthermore, the vitamin K it is rich in helps increase concentration and, more generally, helps mental functions.

Our recipe sees it as the protagonist with Lugana I Frati DOC butter and a contrast of kumquats.


The pumpkin

Il suo colore arancione aiuta a rifornire l’organismo di antiossidanti naturali, in particolare sotto forma di vitamina A, un nutriente importante per il mantenimento dell’integrità di pelle e mucose. Aiuta inoltre a proteggere la vista.

Una calda vellutata di zucca con il contrasto bilanciato di mela gialla sarà una coccola per il tuo palato durante queste giornate ancora fredde dell’anno.

The radicchio

The variety we use is the Trevigiana variety, a Venetian PGI which stands out for its early or late production.

Curiosity: radicchio appeared in Italy in the 16th century, precisely in the province of Treviso, where, from being the food of poor people, it became a prized and sought-after vegetable, thanks to particular production techniques. The full recognition of the incomparable qualities of the product was definitively established with the organization of the first radicchio exhibition, organized on the initiative of the agronomist Giuseppe Benzi in December 1900.

Vegetable cuisine and wines: what combination?

With the new Bistro concept, La Fenice has a new menu oriented towards a more vegetal and sustainable choice for human health and the environment.

But then we asked ourselves: how to combine this new cuisine, a little distant from traditional flavours, with the wines of our Ca’ dei Frati company?

We had an interesting tasting, starting from this perspective, of our white wines which are products of the territory and which go best with plant-based cuisine, together with our sommeliers and chefs. It emerged that the fruity and floral notes, in particular, of Lugana DOC combine traditional flavors, but also fusion, with notes that come from the East, light and particular spices.

Not only wines, but also EVO oil

Our menu includes everything that is produced locally, with particular attention to the pairing of food and wine: the menu in fact suggests the best pairings, tested for you by our restaurant sommeliers.

Extra virgin olive oil, the latest innovation from Ca’ dei Frati, represents an excellent and niche product that we use as a condiment for our new dishes.

It is a pitted oil, with only olives owned by our company Ca’ dei Frati, obtained with a totally inert process to guarantee the authenticity of the scents and flavors derived from the olives.

The following principle is fundamental for pairing: succulent foods are married with alcoholic and tannic wines because they “dry” in the mouth the liquid sensation they leave on the palate and the saliva they generate when chewing, like our Ronchedone and Amarone Pietro Dal Cero . Bitter and spicy foods are paired by contrast with “soft” wines, i.e. fruity, rounded and velvety ones, like our Brolettino.

The research aimed at creating our new menu takes into account the historicity of the territory and of Ca’ dei Frati: for this reason you will be able to choose from the entire range of wines produced by the company, by the glass or in the bottle.

A colorful and seasonal menu

The common thread of this new menu by chef Edoardo will be COLOR in its primary variations, YELLOW, RED, BLUE with the addition of GREEN as the predominant color in the dishes which will mostly be plant-based. Furthermore, the proposals and therefore the colors will vary with each passage of the season.

The menu is designed in a plant-based way as a healthy and environmentally sustainable choice and with a minimal inclusion of fish and meat, to crown a balanced diet, even for those who come to visit us every day. So you will find 70% vegetable ingredient, 20% fish ingredient and 10% animal origin ingredient.

Corto Bio: our new supplier

The menu proposal for lunch and dinner will have a series of fixed dishes that will be changed on a weekly basis and, in addition, you will be able to discover an always new dish of the day for lunch, according to the fresh ingredients that Corto Bio brings us.

The dishes will therefore have seasonal vegetable bases. Finally, for dinner, we like to end with a surprise: the “Incognito Risotto” as the main dish will be offered with surprise ingredients, always seasonal while respecting freshness. The combinations of ingredients will be different every evening based on the harvest, the catch and the fresh market.

Corto Bio is a project born with the aim of creating a short supply chain that brings small local producers and consumers closer together, in a more eco-sustainable market logic. The idea of delivering certified organic vegetables in reusable boxes was born in 2011, to respond to the local needs of Brescia families for fruit and vegetables that are healthy and safe for humans and the environment.
